A favorite dish here at the Allenspark Lodge B&B – and easy to make!
Oven Baked Omelet
9″ x 13″ glass baking pan sprayed w/PAM 350 degrees – 45 minutes
1 c. salsa – spread in bottom of pan
2 c. shredded cheddar cheese \ spread evenly over salsa
2 c. shredded Monterey Jack cheese / (or 4c. Mixed cheese)
12 eggs \
1 c. sour cream \ beat together, dump over cheese
1 c. cottage cheese /
2 T. Chopped chives /
Bake until golden brown and firm; let set for 5-10 minutes to set cheese.
Cut into 12 – 15 servings; recipe can be halved and cooked in 8″ x 8″ pan for
6 – 9 servings.
